Banana Sour Cream Pancakes and Strawberry Kiwi Smoothies

As Charlie and I continue to blog about our culinary experiences you will get to know our family.  We are a little nutty but that is what makes life fun and our universe does center around the kitchen and the meals we share together.

Friday morning I had to get up very early. My daughter desperately wants backstage passes to the upcoming Justin Beiber concert and 92.5 was having a call in contest at 6:10 a.m. this past Friday.  I decided to take advantage of the early wake up call and make a fabulous warm breakfast for my children.  The menu consisted of Banana Sour Cream Pancakes and Strawberry Kiwi Smoothies.

Before I woke my daughter up at 5:50 I enjoyed my daily latte with almond milk and prepared the batter for our pancakes and warmed up our griddle.    These pancakes are definately decadent!  Along with the usual flour, baking powder and eggs it includes lemon zest, vanilla, and sour cream, yum!  They were super easy to make.  The only adjustment I might make next time is to add a little more milk to thin the batter out; it was quite thick.

The Strawberry Kiwi Smoothie recipe has become one of our favorites for school mornings.  The combination of frozen strawberries, kiwis, yogurt and honey is delicious.  I have made them with and without the yogurt and honey to make them a little less fattening and they are still good.  I substitute almond milk for lowfat milk as well and it tastes just as great.

The pancake recipe is out of Ina’s Barefoot Contessa Family Style cookbook and the smoothie recipe can be found online on the Food Network website.  Charlie originally saw the smoothie recipe on one of Ina’s television shows where she cooked with Elmo from Sesame Street.  They were doing all kinds of kid friendly recipes on that episode.

Unfortunately Atty did not win the backstage passes after many attempts at calling, however the breakfast helped to ease her dissapointment.:)

 

Strawberry Kiwi Smoothie

Ingredients

  • 2 kiwis
  • 1 cup frozen whole strawberries
  • 1 container (6 ounces) low fat strawberry yogurt
  • 1/2 cup low fat milk
  • 2 tablespoons honey

Directions

Peel the kiwis and cut them into chunks.

 

Put the kiwi chunks, strawberries, yogurt, milk and honey into a blender container. The blender is sharp inside. Watch your fingers!

 

Cover the blender with the lid and blend on high speed until the mixture is smooth. Turn the blender off and on or pulse, if needed, to break up the strawberries.

 

Pour into four glasses and serve with straws.

Banana Sour Cream Pancakes

Ingredients

Directions

Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

 

Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan to make 3 or 4 pancakes. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter and maple syrup.
